Healthy and tasty at the same time is a hard combination to get. Also preparing breakfast for a husband who is so choosy about food, is a very hard task. He is a man who is a hardcore Mangalorean food fan and I am the total opposite. Hence I keep trying different food recipes, and these blueberry pancakes were a total hit to my surprise.
Here goes the recipe:
For the Pancake batter:
- 1 long banana
- 1 large egg
- 1/4 cup milk
- 1/2 cup wheat flour
- 3 tablespoon oats
- 1/2 teaspoon baking powder
Preparing the Batter:
- Smash the banana completely with no lumps, beat egg into it and add milk and whisk well.
- Add wheat flour and whisk well to avoid lumps again. Add oats and baking powder and give a good mix.
- Check the pouring consistency and add milk. If you want thick pancakes, do not add excess milk. If you want them slightly thin add milk to the batter.
Making the pancakes:
- Heat a pan on low heat and grease it with butter.
- Check the heat and pour batter with the help of a ladle.
- Add blueberries on top of it.
- Fry it both sides and serve hot with honey or pancake syrup.

Note:
- High flame may burn your pancakes.
- Do not make the batter very runny, you will lose the pancake texture.
- You can use sugar for more sweetness, depending on your tastebuds.
