Healthy and tasty is an easy combination to get if we take a closer look in our pantry. One fine morning when my fussy husband said no to ragi, I had to somehow make a way for it to get to his tummy. We are a pancake loving couple. So got my hands to making some yummy ragi pancakes. Ingredients: 1/4 cup ragi flour 3 tbspn wheat flour 1 big banana mashed 1/2 cup milk or as required 1 large egg 1/4th tspn baking powder 1 tspn vanilla essence To make pancakes: In a bowl mash the banana first. Add in the egg and whisk it well Now add the milk and give a good mix. Add in the ragi flour and whisk briskly. Add in the wheat flour and baking powder, give it a mix to get rid of lumps. You can totally skip the baking powder. You can add in sugar if necessary, usually the banana is sweet enough. At last add vanilla essence. It should be thick batter of flowing consistency. In a skillet add 1 tablespoon butter. Once heated, pour the pancake batter with help of a ladle. ...
