A simple recipe is always soothing to your soul. Sometimes it just takes a simple meal to make you feel happy and full. My go to filling dish is Bhindi fry. Since childhood this was the dish that always put up a broad smile on my face when my mom made it for us. Now when I run out of options, my one of the go to recipe is bhindi fry. Fast to cook and tasty to munch on, can be served as a starter or as a side on your platter.
Here goes the recipe.
Ingredients:
- 20 Ladiesfinger
- 2-3 teaspoon Kashmiri chilli powder
- 1/2 teaspoon turmeric powder
- 1/3 teaspoon amchoor powder
- Dash of apple cider vinegar (optional)
- 1 Teaspoon jaggery
- Water
- Salt to taste
- Coconut oil
To make Bhindi Fry:
- Wash the bhindi well and pat them dry.
- Slit the bindi in the center.
- To make marinade, in a bowl assemble all the dry powders and jaggery with necessary amount of water and vinegar to form a paste. Check for taste and make necessary adjustments.
- Rub the marinade to the bhindi and also stuff little in the slit made.
- To fry, heat 3 tablespoon coconut oil on a pan and add the okra.
- Fry till the color fades a little.
- Serve it hot.

Note:
- It is not compulsory to use vinegar. It you like it tangy you can definitely go for it.
- You can substitute coconut oil for a sunflower oil or also canola oil.
