Healthy yet tasty, I got a liking for Bombay sandwich back when I visited Muscat on my school vacations. There was this chaat wala uncle who made amazing chaats. His chutney made us drool and every other day we kept craving for the chaats, especially the Bombay sandwich. After a very long time I started craving for this flavorful dish. Such a fresh dish immersed with flavors of fresh cucumbers, tomatoes and green chutney.
Here goes the recipe.
Ingredients:
- 4 Bread slices
- Cucumber
- Tomato
- Potato
- Onion
- Green chutney.
To Make the Sandwich:
- Butter the bread slices on both side.
- Fry on a pan till it browns .
- Also boil potato till soft. Do not make it mushy.
- Slice cucumbers, tomato, potato and onion
- Generously add the chutney to the bread slices on both sides
- Place the veggies on it and cover with another bread slice on top.
- You can also add ketchup on top of the chutney and then place the veggies.
- Enjoy with cold lassi or hot cup of tea.
For the chutney:
Ingredients:
- Mint leaves
- Coriander Leaves
- 3 cloves garlic
- 1 inch ginger
- Juice of 1 lemon
- 2 Green chillies
- 1/2 Teaspoon chaat powder
- 1/2 Teaspoon black salt
- Salt
- 1.5 Tablespoon curd
To make chutney:
- Grind all the above mentioned ingredients except curd with little water.
- Make it a smooth paste. Check for taste.
- Add in curd and stir to make it smooth.
- Check taste to add in any necessary ingredients.
- Serve it as side or with sandwich.

Note:
- You can skip out on curd if you wish.
- Also adjust with chaat powder as per your liking.
- Minus one green chilli if you are not a fan of very spicy food.
