Crispy Chicken Chilli!

During the lock down we definitely had a tough time getting over our cravings. Common cravings would be chaats, chinese or any other street food. Today I have an irresistible craving for some Chinese food, specially the starter kind of dish. Indo-Chinese food is a real winner when it comes to starters. This dish is always a hit when served with fried rice or noodles.   Here goes the recipe: Ingredients: For Marination: 2 chicken breasts 1/2 onion 1 inch ginger 6 garlic cloves 1.5 Tablespoon Soy sauce 1 teaspoon chilli powder Salt Process: Clean and cut chicken breasts to bite size pieces. Chop 1/2 onion. Fry them till caramelized. Do not brown or over fry them Now in a blender take the caramelized onion and ginger and garlic. Blend it to a smooth paste. In a bowl take soy sauce, red chilli powder, salt and ground paste. Mix it well Marinade the chicken pieces with the mixture, and set aside for an hour. Ragi Pancakes!

Healthy and tasty is an easy combination to get if we take a closer look in our pantry. One fine morning when my fussy husband said no to ragi, I had to somehow make a way for it to get to his tummy. We are a pancake loving couple. So got my hands to making some yummy ragi pancakes. Ingredients: 1/4 cup ragi flour 3 tbspn wheat flour 1 big banana mashed 1/2 cup milk or as required 1 large egg 1/4th tspn baking powder 1 tspn vanilla essence To make pancakes: In a bowl mash the banana first. Add in the egg and whisk it well Now add the milk and give a good mix. Add in the ragi flour and whisk briskly. Add in the wheat flour and baking powder, give it a mix to get rid of lumps. You can totally skip the baking powder. You can add in sugar if necessary, usually the banana is sweet enough. At last add vanilla essence. It should be thick batter of flowing consistency. Beef Momos!

I always wondered how did the unique combination of meat or veggies covered in blankets of maida would be so tempting and lip smacking. To top it up the taste of chutney just gets us all drooling. Momos is the first love of us all. After chicken and mushroom momos I gave a try on beef momos. This definitely turned out to be the best.  Here goes the recipe: Ingredients for stuffing: 1 cup beef mince 1 small onion chopped 2 cloves garlic chopped 1 green chilli chopped 1 tablespoon soy sauce 1 Tablespoon Sriracha sauce 1 tspn pepper powder Spring onions Salt for taste To make stuffing: In a wok add 1tbspn oil and fry onions till translucent.  Add in the minced garlic. Spicy Buttermilk!

Welcome the summer with a smile, and beat the heat with a cool healthy drink. Buttermilk is yummy for the tongue and cooling for the tummy. All time favorite drink to beat the heat and also quickly done.  Here goes the recipe. Ingredients:  1 inch ginger 1 green chilli 1/2 cup yoghurt 1/4th cup water (adjust the consistency as required) 5-6 Mint leaves 1/2 tspn cumin powder Salt for taste To make Buttermilk: In a grinder, add ginger, chilli, mint leaves and cumin powder and pulse it to crush and blend the ingredients. Add in the yohurt and water along with salt and pulse it again to mix well. Strain the buttermilk in to a glass to get rid of ground pieces. Garnish it with some mint leaves and cumin powder. Serve it with ice.

Bhindi Fry!

A simple recipe is always soothing to your soul. Sometimes it just takes a simple meal to make you feel happy and full. My go to filling dish is Bhindi fry. Since childhood this was the dish that always put up a broad smile on my face when my mom made it for us. Now when I run out of options, my one of the go to recipe is bhindi fry. Fast to cook and tasty to munch on, can be served as a starter or as a side on your platter. Here goes the recipe. Ingredients: 20 Ladiesfinger 2-3 teaspoon Kashmiri chilli powder 1/2 teaspoon turmeric powder 1/3 teaspoon amchoor powder Dash of apple cider vinegar (optional) 1 Teaspoon jaggery Water  Salt to taste Coconut oil To make Bhindi Fry: Wash the bhindi well and pat them dry. Ragda Patties!

A true chaat lover never says no to ragda patties. Back in my school days this was my favorite chaat after pani puri. The taste of ragda with the aloo patties along with the crunchiness of freshly chopped onions on top is just scrumptious. At this time of quarantine when I miss all my favorite street food, the next best option I have is to make at home. To mu surprise this tasted exactly like the street side ragda patties. Easy to prepare and tasty to eat, this was a total hit at my home. Here goes the recipe. For the Patties: Ingredients: 3 Medium sized potatoes 1/2 teaspoon chilli powder 1/2 tablespoon corn flour 1/2 tablespoon all purpose flour Salt to taste Ghee for frying To make the patties: Pressure cook the potatoes till soft. Bombay Sandwich!

Healthy yet tasty, I got a liking for Bombay sandwich back when I visited Muscat on my school vacations. There was this chaat wala uncle who made amazing chaats. His chutney made us drool and every other day we kept craving for the chaats, especially the Bombay sandwich. After a very long time I started craving for this flavorful dish. Such a fresh dish immersed with flavors of fresh cucumbers, tomatoes and green chutney.  Here goes the recipe. Ingredients: 4 Bread slices Cucumber Tomato Potato Onion Green chutney. To Make the Sandwich: Butter the bread slices on both side. Fry on a pan till it browns . Also boil potato till soft. Do not make it mushy. Slice cucumbers, tomato, potato and onion Generously add the chutney to the bread slices on both sides Place the veggies on it and cover with another bread slice on top. Butter Fried veggies, Corn on cob and Devilled Eggs!

Craving for veggies, some eggs and corn but lazy to cook, made me get to this easy to go recipe. Yes after work it is hard to think about what to cook, so how to cook will never be an option. Also ordering food is sometimes not a healthy option. Well here is an easy go to recipe, for your tiring day.  Butter Fried Veggies: Ingredients: 6 large brown mushrooms 10-12 cherry tomatoes 1 medium onion diced 1 red bell pepper 1 yellow bell pepper 1/2 teaspoon pepper powder 1/2 Teaspoon paprika powder Dried oregano Salt Butter to fry To Make Butter fried Veggies: In large saucepan add 2 Tablespoon butter Add in the diced onion and fry till caramelised. Now add in bell peppers and saute till little shrinked in size. At this point add in the cherry tomatoes and give a quick stir. Add in the mushrooms. Fry till the mushrooms shrink. Kaandha Poha!

My favorite and a simple go to breakfast for a lazy morning. Kaandha poha is everything in itself. The taste of caramelized onions, the spice of green chillies is nothing but lip smacking. Moreover it is a dish wherein you make use of minimum ingredients and it is ready in a short span of time. It is a perfect dish on a rainy morning, with garam garam masala tea. You sit by the window and enjoy the pitter patter of rain drops, while you sip in the tea and munch on the poha. Here goes the recipe. Ingredients: 1 cup poha 1 medium onion 1 green chilli 3-4 curry leaves 1/2 teaspoon turmeric powder Juice of 1/2 lime Salt Grated Coconut 1 Tablespoon coriander leaves To make Kaandha Poha: Wash poha under running water and keep aside. Baileys Cold coffee!

Coffee is the best drink to refresh our minds. But when it's weekend I went a tad alcoholic on my coffee. When this dalgona coffee was trending, I decided to make the same. But it was a Friday, so I added a bit of Bailey's Irish cream to it. Well I must say, the taste was amazing and it made the coffee taste much more better. Here goes the recipe. Ingredients: 2 tablespoon coffee powder 2 tablespoon sugar 3-4 tablespoon warm water Cold milk 1.5 oz bailey s To make Baileys cold coffee: The initial step is same as that of making dalgona coffee. In a bowl take coffee, sugar and water and beat till you get the frothy smooth texture. It will take approximately 15-20 minutes to get the silky texture. Pork Ribs!

Yet another memory I bring to you. This time it is with pork ribs, which takes me back to the day when I tasted it for the first time. Marinated well in our traditional recipe, barbecued, we quite enjoyed and savored the taste of this red meat covered with all possibles masala's. It was quite a night out, wherein all my friends enjoyed a beautiful scenic view, the long drive and over night party in the open sky and desert around us. Since then I always wanted to make some myself. And here, I finally get the opportunity. Here goes the recipe. For Marination: 6 pork ribs 1 tablespoon ginger garlic paste 1 teaspoon chilli powder/paprika powder 1/2 teaspoon turmeric powder 1.5 tablespoon dark soya sauce 1.5 tablespoon sriracha sauce 1.5 teaspoon sugar Salt to taste Preparing the marinade: Firstly was the meat well In a bowl take all the above ingredients. Well well, here is one cocktail recipe for you to chill out on your weekends. A simple brunch is always satisfying with a chilled cocktail. Sit together, share a laugh, sip on a drink and enjoy the fresh air at your backyard. What more you desire, after spending a hectic robotic week at the work place.  Here goes the recipe. Ingredients: 1.5 oz Vodka Juice of 1 lemon 1 inch grated ginger (Also you can use Ginger beer/Ginger Ale) Mint leaves Soda Simple syrup To make Moscow Mule: In a whiskey glass take 1.5 oz vodka. Add in juice of 1 lemon and grated ginger and syrup and give a good stir. Now add in chilled soda. Kalladka Tea!

One of the famous tea back in my hometown, Mangalore. Kalladka tea is named after it's place Kalladka. More than the taste, this tea is an art in itself. It is famously also known as 3 layered tea. I got obsessed with making this since my brother started travelling to Bangalore, and he always stopped at Kalladka to drink this tea also known as KT. I wondered how can there be 3 layers in tea until I gave it try myself. Here goes the recipe. Ingredients: 1 cup milk 1/2 cup water 1.5 tablespoon tea powder Sugar To make KT: Firstly boil milk. Add desired amount of sugar. Next step is turning the milk frothy. For this you will need 2 cups. Pour milk from one cup to another from quite a distance to make it frothy. In 1-2 minutes you will see a layer of froth appearing on top of the milk. Simultaneously, prepare tea decoction. Boil it to obtain dark color. Mandaas!

Mandaas or steamed rice cakes, is one of our favorite family breakfast.  Easy to make and healthy to eat, it was my mom's go to recipe whenever she ran out of breakfast ideas. She usually made it sweet, smeared it with ghee, so it went well with tea on the side. Now when I miss her food, I try to make her special recipes. Never can I make the same, but definitely try to make a similar one. Here goes the recipe. For the batter: 2 cups Sona masuri rice 1 Tablespoon urid dal 1/2 cup grated coconut Sugar/Jaggery as per your choice of sweetness To Make the Batter: Soak rice and urid dal for 5-6 hours. Grind it well to a smooth batter adding in grated coconut with sufficient water to get dosa batter consistency. Add in sugar or jaggery as per your sweet tooth. Transfer it to a deep bottomed vessel. Aloo Paratha!

Every school vacation we traveled to Muscat, because our dad worked there. And I still remember, a Pakistani guy who made these fresh paratha's and tandoori chicken, watching him make those paratha's, made me and my brother drool. Every weekend our dad got us food from there. Well past memories are always nostalgic. My love for Aloo paratha also grew from there. I have not eaten such a paratha anywhere else. Absolutely lip smacking and tummy filling. Well I was craving for a paratha so bad since few days, I ended up making a few to keep my tummy calm. Here goes the recipe. For Aloo mixture:   4 potatoes 2 green chillies 1 teaspoon red chilli powder 1/2 teaspoon garam masala powder 1/2 teaspoon black salt 1 tablespoon coriander leaves. Blueberry Pancake!

Healthy and tasty at the same time is a hard combination to get. Also preparing breakfast for a husband who is so choosy about food, is a very hard task. He is a man who is a hardcore Mangalorean food fan and I am the total opposite. Hence I keep trying different food recipes, and these blueberry pancakes were a total hit to my surprise. Here goes the recipe: For the Pancake batter: 1 long banana  1 large egg 1/4 cup milk 1/2 cup wheat flour 3 tablespoon oats 1/2 teaspoon baking powder Preparing the Batter: Smash the banana completely with no lumps, beat egg into it and add milk and whisk well. Add wheat flour and whisk well to avoid lumps again. Add oats and baking powder and give a good mix. Check the pouring consistency and add milk. If you want thick pancakes, do not add excess milk. Weekends are meant for royal family breakfast. With the senior most to the junior most, all sitting around a dining table and sharing a happy laugh together with a cup of hot tea and sumptuous breakfast. My love for rava dosa grew immensely not just because of it's taste, but also it is a source of bonding with my dad and brother. After the Sunday mass, we go to a hotel and have our royal breakfast. Mutton Biryani

Finally I get a blog, and the first recipe I post is Mutton biryani. Biryani is a dish which is easy to cook, but getting it right is an art. After multiple failures when I finally got it right, there was no stopping me to take it to my blog to share my happiness. Since childhood, I was never fond of this dish, which I always referred it to a non-veg khichdi. I know my readers would hate me for calling it so. Hence never tried making it with interest. My perception towards biryani changed, when my mom made it a long time ago (which was the best and I could not get my recipe taste close to it), and then I happened to taste my aunt's best in town biryani recipe, which finally inspired me to make my best mutton biryani, and indeed it was lip smacking.
